How is saffron used correctly in cooking?

If you buy saffron in threads, you can enjoy the full flavour and quality. But what is the best way to process saffron threads and make the most of them in cooking? Here are the most important tips:
👉 Soak the saffron: In order for saffron to develop its intense flavour and colour evenly, the saffron threads should be dissolved in a warm liquid for around 20 minutes. Water, milk or cream are ideal for this - the choice depends on the dish.
👉 Process and grind the saffron threads: Freshly ground saffron threads release their flavour best. Add a pinch of sugar to the threads before crushing them. This produces a fine powder that is easy to work with and provides a strong flavour.
👉 Use saffron correctly: As saffron is very sensitive to moisture, it is advisable to dry the saffron threads briefly in the oven at 50-60 °C before grinding. This makes them crumbly and ideal for grinding.
