Die Br\u00fche in einem Topf einmal zum Kochen bringen und dann den Herd herunterschalten, damit die Br\u00fche warm bleibt, aber nicht verkocht. 3 Essl\u00f6ffel der Br\u00fche abnehmen und in einem kleinen Gef\u00e4\u00df zusammen mit dem Safran geben, sodass dieser sich aufl\u00f6st.<\/p><p>Nun die H\u00e4lfte der Butter in einem mittelgro\u00dfen Topf erhitzen und die Schalotten darin anschwitzen. Den Risottoreis dazugeben und einige Minuten mitanbraten, damit sich R\u00f6staromen bilden. Das Ganze mit dem Wei\u00dfwein abl\u00f6schen und bei geringer Hitze und unter st\u00e4ndigem R\u00fchren k\u00f6cheln lassen, bis die Fl\u00fcssigkeit vom Reis aufgenommen wurde. Als n\u00e4chstes den aufgel\u00f6sten Safran hinzugeben.<\/p><p>Anschlie\u00dfend immer wieder einen Teil Br\u00fche zum Reis geben und so lange umr\u00fchren und k\u00f6cheln lassen, bis kaum noch Fl\u00fcssigkeit vorhanden ist. Das Ganze wird so lange wiederholt bis die Br\u00fche leer ist.
