Zwei Backbleche einfetten und beiseitestellen.<\/p><p>Berberitzen 30 Minuten lang in warmem Wasser einweichen und abtropfen lassen.<\/p><p>In einer gro\u00dfen Pfanne 3 Essl\u00f6ffel Oliven\u00f6l auf mittlerer Stufe erhitzen. Die Zwiebeln zugeben und etwa 10 Minuten lang braun braten. Die Hitze auf mittlere Stufe reduzieren und unter gelegentlichem R\u00fchren so lange in der Pfanne lassen, bis sie dunkelbraun und karamellisiert sind. Berberitzen, Mandeln, Tamarinde und Knoblauch hinzuf\u00fcgen und etwa 10 Minuten lang kochen, bis sie duften. Vom Herd nehmen und Koriander, Petersilie und Estragon unterr\u00fchren.<\/p><p>Fisch mit Salz und Pfeffer w\u00fcrzen. Jeden Fisch gleichm\u00e4\u00dfig f\u00fcllen und mit dem restlichen Oliven\u00f6l bestreichen. Ca. 15 Minuten lang backen.
