Heraus kommt ein zwar simples, aber umso schmackhafteres Gericht, was bei jedem sehr beliebt ist. Nebenbei die Zwiebel fein schneiden und die Knoblauchzehen sch\u00e4len. Die Kartoffeln sch\u00e4len und in Scheiben schneiden.<\/p><p>In einer Pfanne etwas \u00d6l erhitzen und die Zwiebeln hinzugeben und die Knoblauchzehen hineinpressen. Wenn alles goldbraun gebraten ist, ein Teel\u00f6ffel Kurkuma dar\u00fcber streuen und das Ganze einmal wenden. Dann das Hackfleisch hinzugeben und beim Braten sch\u00f6n kr\u00fcmelig zerkleinern. Nun kommt das Tomaten- und Paprikamark (oder Pulver) hinzu und sch\u00f6n mit der Hackfleischmasse durchmischen. Anschlie\u00dfend alles mit Salz und Pfeffer kr\u00e4ftig w\u00fcrzen und beiseitestellen.<\/p><p>Die fertig gegarten Nudeln abgie\u00dfen und in einer separaten Sch\u00fcssel zusammen mit der Hackfleischmischung durchmischen. Den Topf zur\u00fcck auf den Herd stellen. 5 Essl\u00f6ffel \u00d6l und 5 Essl\u00f6ffel Wasser, sowie den gemahlenen Safran und eine Prise Salz hinzugeben. Das Ganze auf hoher Stufe erhitzen und die Kartoffelscheiben auf dem Boden verteilen. Dann die Nudel-Hackfleischmischung darauf schichten und mit einem in ein Geschirrtuch eingeschlagenen Topfdeckel abdecken. Nun alles auf hoher Stufe so lange erhitzen, bis der Deckel von au\u00dfen hei\u00df wird (nicht abnehmen!). Dann auf kleine Stufe stellen und die iranischen Makkaroni mindestens 45 Minuten d\u00e4mpfen lassen.<\/p><p>Vor dem Servieren die Nudeln im Topf etwas beiseiteschieben und die Kartoffelkruste St\u00fcck f\u00fcr St\u00fcck entnehmen. Wer sich traut, kann auch versuchen das Ganze wie einen Kuchen zu st\u00fcrzen. Dann k\u00f6nnen die Nudeln mit der Kruste angerichtet und mit einem leckeren Joghurtdipp (z. B.
